Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 onion
  • 4 cloves garlic
  • 1 red bell pepper
  • 1 cup (250ml) chicken bone broth or stock
  • 6 pork sausages (1lb/450g)
  • 1 can chopped tomatoes (14.5oz/400g)
  • 1 can cannellini beans (14.5oz/400g)
  • 1 tablespoon tomato paste
  • 1 cup (150g) frozen green beans
  • 3 dried bay leaves
  • Small handful fresh sage (optional)
  • ½ teaspoon ground black pepper
  • Salt to taste

Sage

Sage goes notoriously well with sausages and onions, but if you don’t have any fresh sage on hand then you can leave this out of the recipe. I have a large sage plant in my garden, so this was a good opportunity for me to use some of it.

Beans

I have used frozen green beans in this recipe, but you can also use fresh green beans if you prefer.

You can also replace the cannellini beans with butter beans, haricot beans, red kidney beans or whatever beans you might already have in your kitchen cupboard.

Bone Broth or Stock

I like to use homemade chicken bone broth for this recipe. Making your own bone broth is easy and will add extra nutrients to this meal. Learn how to make Chicken Bone Broth HERE.

However, if you don’t have any homemade bone broth to hand, you can use store bought chicken bone broth or stock instead.

A good quality brand of ready made bone broth is Kettle & Fire.

Please check the ingredients label on any store bought bone broth, if you want this recipe to remain gluten and dairy free.

Sausages

If you are trying to avoid gluten, check the ingredients on your sausages to ensure they are gluten free. Most good quality sausages are these days, but it’s worth double checking.

I like to seal the sausages in a frying pan before placing them in the slow cooker. This is to ensure that they don’t fall apart during the cooking process.

How to Make Slow Cooker Sausage Stew

Step 1

Chop up the onion, garlic, red pepper and fresh sage leaves (if using).

Step 2

Add 2 tablespoons of olive oil to a frying pan. Cook the sausages and onions together on a medium heat, until the sausage skins are sealed are starting to brown. This should take about 5 minutes.

Be careful not to burn the onions, you just want to cook them until they start to soften.

Step 3

Add the garlic to the frying pan and cook alongside the sausages and onions for 1 more minute.

Step 4

Transfer the sausages, onions and garlic into the slow cooker.

Add the rest of the ingredients to the slow cooker and cook on a low heat for 4 hours.

I recommend adding any salt once the stew is cooked and you have had a chance to taste it first.

Step 5

Serve the stew either on its own or with a side dish of mashed or roasted potatoes.
