Ingredients

  • 50g (¼ cup) popcorn kernels
  • 1 tablespoon organic coconut oil
  • 1 tablespoon butter
  • 2 tablespoons nutritional yeast
  • Salt to taste

Ingredient Notes

Popcorn Kernels

Use a good quality brand of un-popped popcorn kernels, ideally organic.

Anthony’s Organic Yellow Popcorn is a good choice if you’re in the US. If you’re in the UK I’d recommend Whole Food Earth Organic Popping Corn.

A little goes a long way. A ¼ cup (50g) of un-popped popcorn will turn into approximately 6 cups of popcorn once it is cooked.

Coconut Oil

Cooking the popcorn in unrefined organic coconut oil helps to keep this recipe as healthy as possible. Other recipes I’ve come across suggest using up to 3 tablespoons of coconut oil, but in my experience one heaped tablespoon is usually enough.

If you don’t have coconut oil then you can use a tablespoon of butter instead. Some recipes suggest using olive oil or avocado oil, but I’m not so keen on the taste when using these oils for popcorn.

However, they are still a healthier alternative to using other cooking oils such as vegetable, rapeseed (canola) or sunflower oils. These types of oils are best avoided.

Salt

Use a good quality salt like Celtic sea salt or Pink Himalayan. These contain minerals that are striped out of refined table salt.

Nutritional Yeast

Nutritional yeast adds a nice cheesy taste to your popcorn. It is high in protein and rich in B Vitamins. Nutritional Yeast is deactivated yeast made from the Saccharomyces cerevisiae strain.

Alternative Seasonings

This recipe is delicious with salt, butter and nutritional yeast added to once cooked, but there are endless alternative seasonings you could try. Including:

  • Cinnamon
  • Toffee sauce
  • Caramel sauce
  • Garlic powder
  • Paprika or cayenne pepper
  • Freshly grated cheese such as parmesan or cheddar

How to Make Homemade Popcorn

Step 1

Add a tablespoon of coconut oil to your pan along with 3 popcorn kernels. Set the temperature to a medium heat. Cover with a lid.

Once the initial 3 popcorn kernels have popped, the oil has reached the correct temperature and you can add the rest of the kernels to the pan. Cover with a lid and shake the pan to ensure the popcorn kernels are coated in oil.

Shake the pan every few seconds to keep the popcorn moving, to avoid it from burning. Every now and again open the lid slightly to release some steam. Don’t open it up too wide, or the popcorn will jump out of the pan!

Step 4

After a few minutes the popping sound will start to slow down. This means that most, if not all, of your popcorn kernels have popped. Pour the popcorn into a large mixing bowl.

Step 5

If you are using butter then add a tablespoon of butter to the same pan and allow it to melt. Once the butter has melted, pour it over the popcorn and add the nutritional yeast and salt. Toss it well using a couple of spoons to ensure that the seasoning is distributed evenly throughout the bowl. Serve and enjoy!

Storage

Homemade popcorn is best enjoyed straightaway.

However, you can store it in an air tight container at room temperature for up to 3 days. Each day it will start to get a bit softer. So try and eat it sooner rather than later.
