Why You’ll Love This Recipe

  • Minimal effort – a simple lunchtime snack or side salad that’s quick and easy to make.
  • Delicious on its own, or you can make it more substantial by serving with some cold meats and bread.
  • Fresh, light and tasty – eating this salad makes you feel like you could be in the Mediterranean.

Ingredients

  • 2 large tomatoes
  • 125g (4.4 oz / 0.28 lbs) mozzarella cheese
  • handful of fresh basil leaves
  • salt & pepper to taste

Ingredient Notes

Tomatoes

You can use any variety of tomatoes for this salad. Large heirloom tomatoes are especially tasty if they are in season.

Mozzarella

Mozzarella cheese can be made from cow or buffalo milk. Depending on where you buy it from, it may come soaked in brine, which will need to be poured away.

Basil

Fresh basil leaves taste wonderful with the tomatoes and mozzarella. However, if you cannot find fresh basil then dried basil can be used instead.

If you want to make this into a traditional Caprese salad, then you would just need to add a drizzle of olive oil.

Recipe Tips

Tastes best when eaten fresh: I’m all for prepping meals ahead of time, but this dish tastes best when served immediately. Luckily though it’s super quick to make, if you don’t have loads of time.

Make it into a larger meal: This fresh tasting salad would go really well with some grilled chicken or fish. Or you could add some cold meats such as Parma ham or salami and serve with some crusty bread.

Slow down and savour: Even though this salad is quick to make, you don’t have to eat it quickly. Mediterranean people know how to do lunch properly and will happily take their time over lunchtime meals.

I’m terrible for eating my food too quickly. It’s so much better for your digestion to take smaller bites, chew more slowly and really give yourself a chance to enjoy your food.
