Notes

Tastes best when eaten fresh: I'm all for prepping meals ahead of time, but this dish tastes best when served immediately. Luckily though it's super quick to make, if you don't have loads of time.
Make it into a larger meal: This fresh tasting salad would go really well with some grilled chicken or fish. Or you could add some cold meats such as Parma ham or salami and serve with some crusty bread.
Slow down and savour: Even though this salad is quick to make, you don't have to eat it quickly. Mediterranean people know how to do lunch properly and will happily take their time over lunchtime meals.
I'm terrible for eating my food too quickly. It's so much better for your digestion to take smaller bites, chew more slowly and really give yourself a chance to enjoy your food.
Caprese Salad: To turn this dish into a traditional Caprese salad, you would just need to add a drizzle of olive oil.
