⅓cupmaple syrup100g
⅓cupcoconut oil (melted)70g
1tbspvanilla extract
Instructions
Pre-heat your oven to 150 °C / 300°F.
Add the wet ingredients to a Dutch oven or saucepan and set the temperature to a low heat, just enough to melt the coconut oil. Mix well.
Now add all of the dry ingredients to the pan, apart from the chocolate chips. These are added at the end, once the granola has had a chance to cool.Mix well so that the dry ingredients are fully coated in the syrup, oil and vanilla extract.
Line a baking pan with parchment paper. Transfer the granola mixture on to the parchment paper and spread it out evenly.Place in the oven for 25-30 minutes, turning the mixture halfway through.
Remove from the oven after 25-30 minutes, just as the granola is starting to brown at the edges. When the granola mixture has cooled slightly, add the chocolate chips.
Once the granola has cooled completely, transfer it into an airtight storage container.Granola tastes great served on its own with milk, or alongside some yogurt and fresh fruit.

How to store homemade granolaKeep your granola in an airtight container, such as a glass jar with a lid.Store it in a cool dark place, like a cupboard or pantry, for up to 2 weeks.Substituting ingredientsThis recipe is pretty flexible in terms of the dry ingredients you can add or remove depending on your preference.Freeze dried strawberries are a lovely addition to this recipe, but you can leave these out if you would prefer.Freeze dried raspberries, or other types of dried fruit such as raisins, cranberries or desiccated coconut, would also work well in this recipe.You can use dark, white or milk chocolate chips in this recipe, or choose to leave them out altogether. To make this recipe vegan friendly, use dairy free chocolate chips.
